Chicken 65

When we talk about South Indian starter, the first dish that stuck in our mind is Chicken 65.Actually, there is a famous restaurant in South and they have a special starter on their menu at number 65 which is full of spiced and deep-fried chicken dish, thereafter this dish is called Chicken 65. The dish maybe varies with respect to the set of ingredients used. This dish can be cooked using boneless chicken(you can use also use bone-in chicken). This dish is mainly served with onion salad and lemon wedges. Vegetable variants can also be cooked with goobi or paneer.There are so many theses about this dish's origin but the foodies don't care about those thesis or logic, they only love that name chicken 65 and enjoy its yummy taste.

Ingredients 
  • Chicken, 300 gm
  • 1 egg 
  • Corn flour, 2 tbsp
  • Rice flour, 2 Tsp
  • Oil for deep frying


For Chicken Marination:
  • Ginger-garlic paste, ½ tbsp.
  • Red chilli powder, ½ tsp 
  • Lemon juice, 1 Tsp
  • Black Pepper powder,½ tsp 
  • Turmeric,⅛ tsp (OPTIONAL)
  • Salt to taste



Seasoning:
  • Cumin, ½ tsp
  • Chopped garlic,1 Tsp 
  • Black Pepper powder, 1 Tsp 
  • Green Chillies, 2-3 nos
  • Curry leaves
  • Seasoning mixture 
  • Red chilli powder,¾ tsp 
  • 1 tsp sugar
  • Garlic paste, 2 Tsp
  • Salt to taste
  • Yoghurt, 2 Tbsp 

Preparation
  1. First, wash the chicken under running water and drain off the excess water. 
  1. Now, take a medium-sized bowl and marinate the chicken with marination ingredients. Keep aside the marinated chicken for at least 1 hour. Keeping for overnight gives more moist chicken.
  1. Now, make the seasoning mixture using red chilli powder, sugar, garlic paste, salt, yoghurt. Keep this seasoning mixture aside.
  1. In the marinated chicken add a beaten egg and some corn-flour and besan and 2 sprinkles of baking powder & mix up well. If needed add a little amount of water for a good binding.
  1. Then, take a deep pan and heat up oil to fry the chicken, fry until chicken is cooked fully and turns into golden(You can use some food colour to bring some colour on your plate. Stir while frying for even frying. When chicken turns into golden or red (if using food colour) then drain them on a kitchen tissue.
  1. Heat up a pan with 1 tbsp. oil.Then add curry leaves, green chillies and cumin, fry till the leaves turn crispy. Keep this aside for garnish.
  1. Put the pan on the gas again and wait until its start bubbling.
  1. Now, add the fried chicken in the seasoning and tossed gently, don't cook for a long time that makes the chicken hard. After 4 min on low heat put the flame off.
  1.  Serve the restaurant style chicken 65  hot with onion rings and lemon wedges.
