INGREDIENTS
- Carrot, 1.5 kg
- Milk, 200 ml
- Sugar, 150 gm
- Condensed Milk, 2 tbsp
- Green Cardamom Powder, ½ tsp
- Cashew Nuts(chopped), 2 tbsp
- Raisins, 1 tbsp
- Pistachio(chopped), 1 tbsp
- Almond(chopped), 1 tbsp
- Mawa(grated), 2 tbsp
- Saffron Strands,
For Garnishing:
- Silver Wrapper
- Dry Fruits
- Mawa
PROCESS
- First, wash the carrot thoroughly
- Then, grate the carrots & squeeze the carrots to strain all exists water.
- Take a medium bottom pan and put the flame medium.
- Put the finely grated carrot into the pan and stir continuously to prevent burning out.
- When the carrot quantity reduces three times(don't stop stirring) & the carrot turns into nice red colour(it takes up to 20 min)), then add the sugar & mix it well.
- Pour the milk into the pan when the sugar caramelised and start bubbling(Please put the flame medium when you are adding the milk).
- Then give it a quick stir and add saffron strands(which I have dissolved in warm milk previously) & add the dry fruits along with the grated mawa.
- Now, just wait for 4-5 min & your Gajar Ka Halwa is ready.
- Garnished with some grated mawa and some dry fruit.You can add the edible silver wrapper to give it a classy look.
