Sorshe Ilish is a Bengali dish made from Hilsha or Tenualosa ilisha, a type of herring, cooked in mustard gravy.The dish is popular among the people in West Bengal & Bangladesh.

Ingredients(1cup=250ml)
• 500 gm hilsa
• 3 tbsp mustard oil
• 3 tbsp mustard seeds
• 4 tsp poppy seeds
• 6 green chillies-slit
• 4 tbsp ginger paste
• 1 tomato chopped
• 1 tsp panch phoron
• 1 tsp red-chilli powder
• 1 tsp turmeric powder
• Salt to taste
• 1 tbsp fresh coriander leaves
• 3 tbsp mustard oil
• 3 tbsp mustard seeds
• 4 tsp poppy seeds
• 6 green chillies-slit
• 4 tbsp ginger paste
• 1 tomato chopped
• 1 tsp panch phoron
• 1 tsp red-chilli powder
• 1 tsp turmeric powder
• Salt to taste
• 1 tbsp fresh coriander leaves
How to Make Sorsebata Ilish Mach
1)First,marinate the fish with salt and turmeric.
2)Then soak that mustard and poppy seeds and grind them into a paste.
3)Heat up the mustard oil in a pan and splutter panch phoron.
4)Now,add ginger paste and mustard-poppy paste and sauté it.
5)Then add turmeric and red-chilli powder.
6)Add the marinated fish in the pan along with green chillies and salt.
7)Add the tomatoes. Mix well and cook on simmer.
8)Wait,until the raw flavour of spices goes.
9)Once done, serve on a plate and add 1tbsp mustard oil over it and some fresh coriander leaves.
