Hi foodies,today I am going to share with you the Dhaba style palak paneer recipe but in my way. Ingredients (1cup = 250 ml)
For the palak puree:
• 250 grams fresh spinach
• 2 chopped green chilies
• 2 small roughly chopped garlic cloves(I don't prefer this,You can add if you like)
• 2 tsp roughly chopped ginger
• 3 cups water for blanching spinach
• 3 cups water for ice bath
• 2 chopped green chilies

For palak paneer curry:
• 1 small to medium sized onion - finely chopped
• 1 medium size chopped tomato or 3tbso tomato puree
• 4 to 5 garlic cloves(roughly chopped)
• ½ tsp cumin seeds
• ¼ tsp turmeric powder
• ½ tsp red chili powder
• a pinch of asafoetida
• ½ tsp garam masala powder
• 1 indian bay leaf
• 200 to 250 grams paneer
• ⅓ to ½ cup water or add as required
• 2 tbsp fresh cream
• 2 tbsp oil or butter
• 1 teaspoon kasuri methi leaves [Kasuri methi is crushed and added right towards the end. just before adding cream.]
• Salt as required
• 1 medium size chopped tomato or 3tbso tomato puree
• 4 to 5 garlic cloves(roughly chopped)
• ½ tsp cumin seeds
• ¼ tsp turmeric powder
• ½ tsp red chili powder
• a pinch of asafoetida
• ½ tsp garam masala powder
• 1 indian bay leaf
• 200 to 250 grams paneer
• ⅓ to ½ cup water or add as required
• 2 tbsp fresh cream
• 2 tbsp oil or butter
• 1 teaspoon kasuri methi leaves [Kasuri methi is crushed and added right towards the end. just before adding cream.]
• Salt as required
Garnish:
• A few tsp of cream or butter for topping
• ½ inch ginger - julienned
• Lemon wedges or slices
• ½ inch ginger - julienned
• Lemon wedges or slices
Making the spinach puree:
1) At first rinse the spinach or palak leaves very well in running water.Then tender stem are fine. If the stems are stringy, then discard the stems.
2) Boil 3 cups water in a pan or microwave. Then add ¼ tsp salt to the hot water and stir.Now add the palak leaves in the hot water.Close with a lid and let the palak leaves sit in the water for 2-3 mins.
3)Now strain the palak leaves.
4)Immediately add the palak or spinach leaves in a pan or bowl containing ice cold water.[This method helps in preserving the green color of the spinach.] Just add 8 to 10 ice cubes to 3 cups water to get cold water.Now allow the spinach leaves to be in the cold water for a minute or two.
5)Then drain the ice cold water.Add the spinach in a blender jar with chopped ginger, garlic and green chilies.
6)Now make a smooth palak puree.No need to add water while making the puree.Keep the spinach puree aside.

4)Immediately add the palak or spinach leaves in a pan or bowl containing ice cold water.[This method helps in preserving the green color of the spinach.] Just add 8 to 10 ice cubes to 3 cups water to get cold water.Now allow the spinach leaves to be in the cold water for a minute or two.
5)Then drain the ice cold water.Add the spinach in a blender jar with chopped ginger, garlic and green chilies.
6)Now make a smooth palak puree.No need to add water while making the puree.Keep the spinach puree aside.
Making palak paneer curry :
1)At first heat up oil or ghee or butter in a pan.For butter, melt it a low flame and dont let it to be brown.
2)Now,add the cumin and let them splutter & add the indian bay leaf.
3)Add the finely chopped onions.Sauté till the onions become golden.
4)Then add the finely chopped garlic.Sauté till the raw aroma of garlic goes away.
5)Add the chopped tomatoes& stir and sauté the tomatoes till they soften.
6)Once the tomatoes are softened,then add the turmeric powder, red chili powder and asafoetida & stir very well.
9)Then add the palak puree& stir well.
9)Now add water as required & stir again.
10)Let the gas on simmer for 6-7 minutes or more till the palak or spinach is cooked.Now season with salt.The gravy or sauce will also thicken by now.
11)Stir and add garam masala powder.
12)Stir again and then add the paneer cubes.
13)Stir gently and simmer on a low flame till the paneer cubes become soft and succulent. about 1 to 2 minutes.
14)Lastly add fresh cream.Stir gently again so that the cream gets incorporated in the palak paneer gravy uniformly & switch off the flame.
15)Stir and serve the palak paneer hot.You can top the palak paneer with some butter or cream also while serving.Also drizzle a few drops of lime or lemon juice on top along with ginger julienne.

4)Then add the finely chopped garlic.Sauté till the raw aroma of garlic goes away.
5)Add the chopped tomatoes& stir and sauté the tomatoes till they soften.
6)Once the tomatoes are softened,then add the turmeric powder, red chili powder and asafoetida & stir very well.
9)Then add the palak puree& stir well.
9)Now add water as required & stir again.
10)Let the gas on simmer for 6-7 minutes or more till the palak or spinach is cooked.Now season with salt.The gravy or sauce will also thicken by now.
11)Stir and add garam masala powder.
12)Stir again and then add the paneer cubes.
13)Stir gently and simmer on a low flame till the paneer cubes become soft and succulent. about 1 to 2 minutes.
14)Lastly add fresh cream.Stir gently again so that the cream gets incorporated in the palak paneer gravy uniformly & switch off the flame.
15)Stir and serve the palak paneer hot.You can top the palak paneer with some butter or cream also while serving.Also drizzle a few drops of lime or lemon juice on top along with ginger julienne.
[NB: The paneer cubes can also be lightly fried and then added to the curry as you wish]
